Delicious local squash.

 

What to do with all the beautiful squash available at your local farmers market?

I purchased a butternut squash at the market a week ago to make lasagna. The squash was so good! Absolutely no comparison to what you are able to purchase at the grocery store. And half the price to boot! I just had to go back and purchase another one!

Rather than make soup, I decided to steam the squash, mash it, and then I froze the mash in ice cube trays. Brilliant!

Coming Full Circle

One of my favourite childhood desserts.

 

Isn't it funny how life comes full circle!

Like many of you, we didn't have a lot of money growing up. Soup was a popular way for my mom to stretch the family food budget. Plus, we always had a huge vegetable garden to draw from!

To encourage us to suffer through Day 3 of soup for dinner, my mom would promise us aebleskiver for dessert. Dessert was a rare thing indeed. Aebleskiver? Heaven on earth.

Cooler nights call for soup!

 

With the recent change in weather, comes the craving for a comforting bowl of soup!

While out and about the other day, my mom announced out of the blue, "I want soup for dinner."

With no time, what's a girl to do? Fortunately, here on the West Coast, we are surrounded by an abundance of hard working farmers producing a delicious bounty to choose from. I pulled in to a local farm stand on the drive home.

My brain is going, "Soup, soup, soup!" I spotted some beautiful butternut squash. Hmm. I seem to recall I had a recipe for that.

I Got Myself In To A Real Pickle

Venturing in to the world of pickling.

 

The last few days have been such a gong show! Self-induced, of course.

I got it fixed in my mind that I was going to make dill pickles. Don't ask me why. I have never made pickles before. I didn't even own a canning pot!

Fortunately, Central Builders had canning pots on sale last week. I drove down there to pick one up. They were all sold out! That should have been my first clue that making dill pickles was not a good idea and I should just let it go. But, they called me the next morning to tell me some more pots had come in on the truck the night before.

Oatmeal Cookies

Rainy days call for cookies and milk.

 

There is just something about stormy days that draws me to the kitchen to bake.

My modified oatmeal cookie recipe ( which translates to things I ran out of ), is now my new favourite!

Besides, with the coconut oil, almonds, oats, cranberries, and walnuts, they are good for you, right?! They taste like they are good for me.

Better eat two. Okay, maybe three.

Don't have time for a vacation, but you really need a break? It could be as close as your nearest beach!

Sometimes life keeps us so busy doesn't it? Nose to the grindstone, checking off the to do list each day, only to find out that the list grew back the next day! What?! We forget to look up, take a deep breath, and notice that there is life outside those four walls!

I took a deep breath this weekend and decided I would give myself a mini vacation on Sunday. Okay, I confess. Not really. I was working on my own to do list. But it did involve the beach!  :)
