Coming Full Circle

One of my favourite childhood desserts.

 

Isn't it funny how life comes full circle!

Like many of you, we didn't have a lot of money growing up. Soup was a popular way for my mom to stretch the family food budget. Plus, we always had a huge vegetable garden to draw from!

To encourage us to suffer through Day 3 of soup for dinner, my mom would promise us aebleskiver for dessert. Dessert was a rare thing indeed. Aebleskiver? Heaven on earth.

Rainy days call for cookies and milk.

 

There is just something about stormy days that draws me to the kitchen to bake.

My modified oatmeal cookie recipe ( which translates to things I ran out of ), is now my new favourite!

Besides, with the coconut oil, almonds, oats, cranberries, and walnuts, they are good for you, right?! They taste like they are good for me.

Better eat two. Okay, maybe three.

Delicious Granny Cake

Gluten free delicious granny cake.

Another great gluten free recipe sent to us by Lois Vincent in Little River. And you can freeze it!

Delicious Granny Cake

2 cups gluten free flour
2 tsps psyllium husks
3 tsps baking powder
1 1/2 cups sugar
1 tsp salt
1 tsp baking soda
2 eggs
20 oz can crushed pineapple
1/2 cup brown sugar
1/2 chocolate chips

Crustless Kale Quiche

Volunteering in and of itself is rewarding. I also believe that what you give, good or bad, comes back to you tenfold. I must have done something right, because I really scored this past weekend!

I was selling carnations on Saturday for the MS Society and was teamed up with a delightful lady, Joyce Measor. In between the selling and the thank yous to everyone, we enjoyed quite a varied discussion. One subject of particular interest, to me anyways, was our discussion of kale.

Blender Muffins

This is a recipe I use over and over again. So fast and simple. It is gluten free if you use pure oats. I use Only Oats from Edible Island

Blender Muffins

2 ½ cups oats
1 single serving container plain greek yogurt (I just scooped about ½ cup out of the big container I had. I have tried both the plain and the vanilla)
2 eggs
½ cup sugar (I used coconut sugar)
1 ½ tsp baking powder
½ tsp baking soda
2 large ripe bananas cut into chunks

Fudge Brownies

The other day I had a craving for chocolate. The solution? Magnesium? No. Brownies!

I converted one of the many brownie recipes I have, thinking a fudge brownie might resolve the crumbliness of gluten free baking. Which it did for the most part. Well, of course I had to try them right away!
