Squish Squash

Delicious local squash.

 

What to do with all the beautiful squash available at your local farmers market?

I purchased a butternut squash at the market a week ago to make lasagna. The squash was so good! Absolutely no comparison to what you are able to purchase at the grocery store. And half the price to boot! I just had to go back and purchase another one!

Rather than make soup, I decided to steam the squash, mash it, and then I froze the mash in ice cube trays. Brilliant!

Coming Full Circle

One of my favourite childhood desserts.

 

Isn't it funny how life comes full circle!

Like many of you, we didn't have a lot of money growing up. Soup was a popular way for my mom to stretch the family food budget. Plus, we always had a huge vegetable garden to draw from!

To encourage us to suffer through Day 3 of soup for dinner, my mom would promise us aebleskiver for dessert. Dessert was a rare thing indeed. Aebleskiver? Heaven on earth.

Delicious Granny Cake

Gluten free delicious granny cake.

Another great gluten free recipe sent to us by Lois Vincent in Little River. And you can freeze it!

Delicious Granny Cake

2 cups gluten free flour
2 tsps psyllium husks
3 tsps baking powder
1 1/2 cups sugar
1 tsp salt
1 tsp baking soda
2 eggs
20 oz can crushed pineapple
1/2 cup brown sugar
1/2 chocolate chips

Chicken Curry Soup

Delicious chicken curry soup.

One of my favourite White Spot dishes is their Chicken Curry Soup. Unfortunately, more often than not, when I am there for a meeting, my fav soup is not on the menu! I finally decided to just make it myself at home. I have played with and adjusted this recipe about three times now. It's much chunkier than the soup at the White Spot, but still delish.

Blender Muffins

This is a recipe I use over and over again. So fast and simple. It is gluten free if you use pure oats. I use Only Oats from Edible Island

Blender Muffins

2 ½ cups oats
1 single serving container plain greek yogurt (I just scooped about ½ cup out of the big container I had. I have tried both the plain and the vanilla)
2 eggs
½ cup sugar (I used coconut sugar)
1 ½ tsp baking powder
½ tsp baking soda
2 large ripe bananas cut into chunks

Fudge Brownies

The other day I had a craving for chocolate. The solution? Magnesium? No. Brownies!

I converted one of the many brownie recipes I have, thinking a fudge brownie might resolve the crumbliness of gluten free baking. Which it did for the most part. Well, of course I had to try them right away!

Carrot Cake With Cream Cheese Icing

The autumn is my favourite time of year. What better way to celebrate the harvest then by turning to our good old stand bys, our comfort foods. One of my comfort foods is carrot cake. I love a good carrot cake! Now that I must eat gluten free, it is like I am approaching all my favourites for the first time. What fun! I have tried this recipe a couple of times as a cake, and a couple of times as muffins. Either way, they turned out great. 

Carrot Cake

140 grams of gluten free flour mix (1 cup)

1 tsp psyllium husks

1 tsp baking soda
